Stuffed Breakfast Peppers

Ingredients

4 bell peppers, halved and deseeded
5 eggs
½ cup milk
¾ tsp salt
2 tablespoons scallions, chopped
⅛ cup frozen spinach, thawed
1 cup cheese, divided
1 cup smoked bacon, chopped

Instructions

Preheat oven to 175°C.

In a medium bowl, combine eggs, milk, salt, scallions, spinach, ½ cup cheese and bacon with a whisk until combined.

Place your peppers in a lightly greased baking dish. Pour your egg mixture into the peppers and sprinkle with the remaining cheese. Cover with tin foil and bake for 45-50 minutes, until eggs are set.
