1 head of broccoli
1 red bell pepper
1 apple
¼ cup pine nuts
3 tablespoons Extra Virgin Olive Oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 ½ teaspoons Dijon mustard
1 teaspoon herbal salt
½ teaspoon black pepper


First, cut the stalk off a head of broccoli with a sharp knife. Make sure you cut high enough so that large individual florets fall away as you cut. Then, quarter and deseed the bell pepper and apple.

Add all the ingredients to your blender or food processor and gently pulse until you reach your desired consistency.

Note: This salad is so quickly prepared that it is the perfect salad if you are expecting 12 or even 18 guests. Simply repeat the procedure 2-3 times.
