1/4 Cup of Coconut Flour
•1-2 Tbsp. ofmaple syrup or honey
•1/4 tsp. Bread soda
•Pinch of sea salt
•1 tsp baking powder
•1/4 Cup coconut milk (or any milk)
•3 eggs (or use 3 bananas or chia eggs for vegans)
•2 tsp. Vanilla extract
•1/2 tsp. unsweetened cacao powder
•2 tsp. red gel food colouring or beetroot juice
1.- Mix all your ingredients together in a bowl. Heat up a non-stick frying pan, medium to low heat, with a kitchen paper towel add a little bit of oil to the pan and wipe excess.
2.- Cook 2 tablespoons of the mixture per pancake, flatten and shape into a pancake with a spoon, don’t worry if the mixture looks too dry, the pancakes will be perfect & moist when cooked.
3.-Cook 4 to 5 minutes on each side. Be patient! We are trying to cook them slowly, so they won’t lose that gorgeous red colour and get too brown to quick. Serve with your favourite toppings, like vanilla yogurt & berries.
